New York Cheese Balls
Ingredients

2 cups rice (and 4 cups water)

2 cups cheese (cheddar or mozzarella)

6 slices of bread (GF works just as well)

2 cloves garlic
-
1 tsp salt
-
additional 3 tbs cheese
-
4 eggs
-
oil for frying
Directions
-
cook the rice with butter and any spices if desired

while the rice is cooking, put the bread, chopped garlic, salt, and 3 tbs. cheese in a blender and pulse

when the bread mixture is crumbly (not too fine), empty it into a bowl and set aside
-
heat the oil (enough to deep-fry) to 350 degrees F
-
when the rice is done cooking, place in a microwave-safe bowl and add 2 cups of cheese and melt in the microwave

stir the cheesy rice until well combined
-
in a seperate bowl, crack the eggs
-
take your cheesy rice (cooled) and roll into a ball
-
dip the ball into the raw egg mixture
-
roll the ball in the bread mixture and then add a second layer of egg and bread crumbs
-
deep-fry the cheesy rice ball until brown all around and repeat the process until all the mixtures are used up (you may need to add to some of them)
-
after they're cooled, you must eat them
