The Yummiest, Easiest, and Bestest Mini Churros Recipe is Gluten FREE, Dairy FREE, Soy FREE Corn FREE, ANDDD IS ONLY THREE INGREDIENTS...

I Mean, What Could Be Better?

INGREDIENTS:

-- Any gluten free flour, though I prefer Bob's Red Mill bean flour mix. (1 cup + 2 tbsp)

-- Almond Milk (1 cup)

-- 2 Eggs, preferably room temperature.

-- (optional) Cinnamon-Sugar or chocolate sauce. 

-- (Oil for deep-frying them)

-- (Piping bag, tip is optional if you want a traditional churro look)

DIRECTIONS:

-- Boil the almond milk in a saucepan on high heat and immediately dump all of the flour in at once.

-- Mix with a spatula and whisk out any lumps that may have formed.

-- Whisk separately two eggs and pour them in the pan. 

-- Mix and/or whisk them together. Do not fret, mixture may look a little lumpy. 

-- Boil the oil while you are waiting for the mixture to cool a little. 

-- Separate the mixture into the piping bag and squeeze little mini churros into the oil about 1 and a half to two inches long. (You or a friend can also cut them, or you can just wiggle the piping bag a little to help it release. Making gluten churros requires cutting at the right point, but you don't need to for these) 

-- Deep fry for roughly a several minutes or until browned lightly. 

-- Roll in cinnamon-sugar, clean-up, and enjoy!

WARNING: Oil may explode, so to avoid explosions, deep-fry these on medium and NOT high heat (which may take longer but it's definitely worth it, oil burns DO NOT feel very nice) and make sure that your utensils are COMPLETELY dried, because water will make oil explode. 

I hope you like these. I made these for my brother who can't have gluten and my mother who can't have dairy or soy. A day before that, I had made gluten ones, which were SO GOOD. Then, I set out to the noble quest of making them edible for my mother and brother, and I made something that was even better. (In it's own way, but seriously, I did not have high expectations, and these were SO GOOD. I mean, and I had just the day before eaten the regular ones, and they were definitely comparable to each other. I like them both in different ways, though.)
